HACCP
(Hazard Analysis and Critical Control Points)
With more legal and
customer/supplier orientated requirements, many food business owners need to
carefully consider their needs for information and training in this area.
This 1 or 2 day course is
aimed at anyone in a food related business who needs to have an understanding
of HACCP systems. The course provides all relevant information in order that
the delegates can conduct their own HACCP assessment.
The course is consists of:
· Identifying any hazards that must be prevented,
eliminated or reduced.
· Identifying Critical Control Points at the step or
steps at which control is essential to prevent or eliminate a hazard.
· Establishing critical limits at critical control
points which separate acceptability from unacceptability for the prevention,
elimination or reduction of identified hazards.
· Establishing and implementing effective monitoring
procedures at critical control points.
· Establishing corrective actions when monitoring a
critical control point.

· Development of HACCP procedures
· Monitoring HACCP procedures
